Coconut-Cacao Granola Recipe

Paleo granola: No, that’s not an oxymoron. To make the sweet, crunchy breakfast favorite grain-free, swap out the oats for a mixture of coconut, nuts, and seeds. Here, we’ve added cacao powder and nibs for a healthy morning treat chocoholics will love. 

Coconut-Cacao Granola

Yield: 4 to 6 servings
Active Time: 5 minutes
Total Time: 20 minutes

Ingredients

3 cups coconut flakes
1 1/2 cups raw mixed nuts (almonds, cashews, etc.)
1/2 cup raw pumpkin seeds
1/4 cup sunflower seeds
1/4 cup cacao nibs
3 tablespoons chia seeds
1 tablespoon raw cacao powder
1 teaspoon ground cinnamon
3 tablespoons maple syrup
4 tablespoons coconut oil, melted

Instructions

Preheat oven to 300 degrees and line two baking trays with parchment paper.

Combine all ingredients in a large bowl and mix to thoroughly combine. Spread granola in a thin layer on both baking sheets and bake 10 to 15 minutes or until golden brown. Let cool on baking sheets, then store in a cool, dry place.
