Nutritionally, oats are rich in fiber, phosphorus, thiamine, magnesium, and zinc. Oats may also help lower LDL cholesterol (aka “bad cholesterol”). One study reported that an “intake of oat β-glucan at daily doses of at least 3g may reduce plasma total and low-density lipoprotein (LDL) cholesterol levels by 5 to 10% in normocholesterolemic or hypercholesterolemic subjects. Studies have shown that, on average, oat consumption is associated with 5% and 7% reductions in total and LDL cholesterol levels, respectively.”
The History of Bobo’s
Bobo’s started by accident in 2003, on a rainy day in Boulder, Colorado. Beryl Stafford and her daughter (nicknamed “Bobo”) decided to clean out the pantry and do some baking. They didn’t have a recipe to work from, but found simple ingredients like whole grain oats, vegan butter, brown rice syrup, and organic cane sugar. After mixing it all together, they baked their concoction and patiently waited to see the results. Bobo brought the first batch to school the next day and her friends loved them, which gave Beryl a boost of confidence to bring them to local cafes and grocery stores. As word spread, a business was officially born.
