\n As I've been eating more healthy over the last couple of years, and have found myself substituting the familiar for things I'd never tried before, one item I've run across in recipes was rice flour. I hadn't considered purchasing it until I read somewhere about using it as my coating when I fry foods. I decided to give it a go, and went with this specific brand because I've used - and been very happy - with other products in their line. I'm happy to say that the high quality continues.
\r\n
\r\nRice flour is light in consistency, and while I haven't baked with it yet, I am thrilled with how it does for fried chicken or fried pork chops. A lot of it goes a long ways, so I don't need much for the coating. And it doesn't matter if I've rinsed and dried the meat only, brined it\/rinsed it\/dried it, or applied and egg\/milk wash. The flour - which I usually mix with Kosher, salt, fresh ground pepper and any other spices I might like - clings to each portion of the meat, not in a heavy way, but as a light coat. And it fries beautifully. The crust is a lovely golden brown; crunchy too. So while I'm not using the usual all-purpose flour of my grandmother and my mother, I'm obtaining the same results, and that's all that matters to me.

\r\nI will start using for other recipes in which to utilize rice flour, but until then, I'm happy to have incorporated it into my frying. <\/p>\n

\n I love quite a few of the Bob's Red Mill products, and this is no different. It has made our gluten-free lifestyle so much easier. This flour has been great for making bread. Since rice flour tends to absorb more water than regular, gluten-filled flour, make sure to use extra liquids. It took me awhile to figure that one out, but after the trial and error, my bread is turning out just as good as before. <\/p>\n

I bake a lot and it is great being able to serve gluten free food in my home that tastes great but is still very healthy and gluten free. \n Well I have nothing to compare this to, but this works well as a wheat flour replacement. While I am disinterested in rehashing the classic debate people have about including wheat in the diet as safe or not, if you choose to exclude wheat as I have, this flour works well. <\/p>\n
