\n The first time I tried these I thought they were nearly inedible, could not understand how do many people could convince themselves they were good, and my family laughed through dinner at the squeaky sounds they made. Fortunately I have learned since then from YouTubers: after you rinse and drain the noodles, mix a couple tablespoons baking soda with the juice of a large lemon, massage it into the noodles, let sit for 5-10 minutes (more is fine), rinse thoroughly, then use. Flavor and texture is much improved. <\/p>\n

The flavor is mild, and you have the option of not cooking them if you're looking for something more on the crunchy side. If you're avoiding carbs, these are a good substitute, but do not think you can substitute these for some Italian style pasta dish. You want to keep it more in the stir fry\/Asian food family. I use these and shirataki noodles. The main difference is texture. This one requires a bit longer cooking time to get a softer texture. My aunt prefers the kelp noodles because they don't smell like shirataki noodles do. <\/p>\n

Anyways, the way I do it is I mix 2 tsp of baking soda with a whole lemon in a small bowl. Add in the noodles and start combining it all together. They are a little rubbery in texture out of the package but I rinse and toss them into my food while it cooks and they soften up nicely. It was fantastic! Light, full of texture, and healthy. They don't seem to have much flavor on their own...they absorb whatever flavors you prepare them in. If you don't cook them and use them right out of the bag they have a bit of a crunch to them. I will def get these to do more of the same. \n I've only used one bag of these, and I already really like them. I've tried them in several dishes where noodles or spaghetti were called for, and they the perfect substitute. No, they don't taste like noodles or spaghetti, but they have a very subtle flavor that doesn't overpower your dish, and they just add a little extra pop of texture and yumminess. I don't use regular pasta or rice in cooking, because hubs is diabetic. He can eat these in place of pasta\/rice without spiking his sugar. I highly recommend! And also, great for Asian dishes too. <\/p>\n

\n I originally bought these to cut carbs and try some pasta alternatives, but they actually can actually substitute as glass noodles too if you cook them right! I love love love glass noodles and they went perfectly in the soup I made. I just tossed in some broth, some fish sauce, some wood ear mushrooms, and some shrimp and it tasted so authentic.
\r\nTo get a pasta texture, you'll probably want to cook them for a little less time, but they went great with the vodka sauce I normally use to make pasta.
\r\nMy new favorite way to eat them is actually right out of the bag dipped in bean curd sauce. So tasty and uncooked, they're reminiscent of bean sprouts, another one of my favorite foods. These noodles are great, and I don't feel bad if I end up chowing down on a dish because they're so much healthier than other noodles. Short prep time, easy to cook, and they taste good warm or cold. This is my new pasta\/noodle staple. Yum! <\/p>\n

I add them to the chicken bone broth with some spinach, green peas, and an egg with seasonings to spice it up.
