Not the biggest fan

This was a great noodle alternative for me after I had to cut out quinoa, corn and rice (gluten had already been excluded), however the taste is a bit too funky for me.

Great Taste

The flavor of these soba noodles is fantastic. I purchased them for stir fry as I'm growing a lot of vegetables that lend to stir frying this season. Have used them in multiple dishes and re-ordered more. They're a real hit in the household. I like that they are fully buckwheat unlike the variety at my local stores. Since they are buckwheat, you do have to cook them very carefully: make sure not to over boil and make sure to rinse or you will make them mushy or stuck together in a large clump.

mush / expensive

I bought these because my grocery store stopped selling the ones I liked. At almost double the price I mistakingly thought it was double the amount, so I was surprised to see such a small amount for the price paid. My store not carrying my brand anymore I was still happy to give them a chance. Well I followed the cooking directions and they turned out really mushy and the taste was not good at all. I won't buy again and don't recommend.

Buckwheat Pasta

Buckwheat has a very distinct flavor and for some it's an acquired taste. I love these noodles but these are gluten free and are 100% buckwheat and will not act like a normal noodle. I knew this when I bought it and it was exactly what I wanted.

Nice noodles

Easy to prepare, tasty, and gluten-free. Mine did cook up and stuck together despite rinsing, but I may not have had enough water in the pot for cooking. I made a cold soba noodle salad with bell peppers, carrots, and cucumber with a sesame vinaigrette and it turned out delicious.

I used this as a spaghetti replacement, with tomato sauce and LOTS of herbs and a little avocado oil and I was very happy with it. I prefer the kind that are only half buckwheat for the texture and taste, but I'm not eating as much for taste as for health, so these fit the bill! (and the dish was very tasty as well!)

Great for gluten free

I love that Thrive carries these because when I looked at the selection at my local grocery store, all of their soba noodles were cut with wheat flour, they weren't 100% buckwheat. I had always assumed soba noodles were exclusively buckwheat, but I guess to make them cheaper some companies cut it with wheat. These are great for me as I'm trying to stay on a gluten-free diet.

Wheat-free and Great Texture

It's hard to find soba noodles that are made from 100% buckwheat. These wheat-free noodles are easy on the tummy and have firm texture. The cost on Thrive also makes them a little easier on the wallet.

Good for Soba

I'm used to soba noodles that aren't 100% buckwheat, so these weren't what I am used to. I'm not a soba expert, but these were just fine. My wife is gluten intolerant so these are a great for us. I made miso soba with these noodles. I cooked these per instructions and they came out al dente at the recommended 8 minutes. I've ordered these again because my wife and I enjoyed them.

Good buckwheat flavor

This is a good healthy pasta that I eat instead of whole wheat. As the label says, buckwheat isn't made from wheat, but it is healthy and natural and has a great flavor. I use it in place of my normal pasta with tomato sauce, or if I'm making a Thai or Chinese dish, I'll mix this in for a unique taste. It's high in fiber and low in fat.

How to Cook

These are interesting noodles, but I'll admit that I had to do a Google search to figure out exactly how to cook them. It turns out that you add a bit of peanut oil into the water, and you cool and boil the noodles three times over an 8-minute total cooking time. That makes them taste as close to the traditional soba noodles as possible. These aren't restaurant-quality, but they're definitely good, and I enjoy them.

Potential

I haven't had the chance to try this in a bunch of different ways, but I have to say I liked it cold with just a little bit of olive oil and parm cheese. It was really good. I want to try this for a pasta sushi or cut up and cooked an placed on a salad. I think it would taste amazing. I really like the flavor of this Buckwheat Soba Pasta.
