\n It has a grainier texter than white, but softer than whole wheat. Fantastic taste. This one lb. bag doesn't go very far, so you might want to buy a few bags. Of course that causes the price to go up. I made biscuits out of it with grass fed butter. They turned out very nice. <\/p>\n

I suspect it might make a crunchy cookie less likely, but I have given that up as I can't eat enough sugar to create a crunchy cookie. I like the grainy taste of whole grains baked goods, and this flour is more wholesome than white flour. <\/p>\n

\n So, I made a cobbler with this flour. I read that it can be used as equal ratio to regular flour--and it should cook the same as regular flour (unlike other organic flours) which appealed to me! But, I noticed that instead of an hour cook time--it took about two hours cook time for the cobble to set in the middle. The batter didn't get as 'puffy' as regular flour did either, so it seemed like the cobbler was flat--or as if I had used old flour that didn't rise properly. Although, through that whole mess, the cobbler tasted FANTASTIC--no one could tell that I had used a different type of flour. Everyone loved that cobbler, and that's the main objective! <\/p>\n
