The History of P. Balistreri
Founder Pete Balistreri is a first-generation Sicillian-American and San Diego resident who has always had a passion for food. He attended the renowned California Culinary Academy in San Francisco, and went on to apprentice in some of the country’s top kitchens.
With his knowledge and love for cuisine, as well as drawing from his Sicilian heritage, Chef Balistreri taught himself how to make salami and cure prosciutto while working as the executive chef at his restaurant, Tender Greens. His Italian-style salami garnered a cult following in the San Diego area and beyond, which led him to the launch of P. Balistreri, in partnership with La Espanola Meats.
