Ohmygoodness, this was seriously so good. I added a bunch of chopped asparagus and sauteed them in the sauce with a little bit of water so it wouldn't dry out. Once the asparagus was tender I added the quinoa to warm through. That was my dinner and it was so satisfying. Next time I might try adding mushrooms, broccoli florets, veggie beef crumbles or vegan chicken strips, seeds or nuts and whatever else I could think of just to mix it up. This would also be delish if served on a bed of lettuce.
But as far as this serving two people... PSH! Maybe if served as a side and dressed up with additional veggies. This container is pretty small, but the price on Thrive makes this more than worth it.
Will stock up on this, for those days I want a quick but healthy and delicious dinner.

I added cooked asparagus, raw walnuts, and raw sweet onion. A whole meal. Delish. They weren't timid with the jalapeno in the sauce.
