With a name like Chef’s Cuvee, it’s clear this isn’t any ordinary fish sauce. Creator Cuong Pham was motivated by nostalgia and wanted to make a fish sauce that tasted like the one he enjoyed growing up in Saigon. So, he revived the traditional method of using tropical wood barrels for slow fermentation and also relies on wild-caught black anchovies from the waters off the island of Phu Quoc to give the sauce its unique flavor. The quality of the fish is incredibly important because it’s one of Red Boat’s main ingredients (the other being salt)
