The Wind Gap Soif is a time capsule of the 1940s, when most of its vines were planted. Unlike most Northern California wines that are planted in a monoculture, the Soif is a one-of-a-kind field blend of Zinfandel, Valdiguie, Carignan, Mourvedre, and more. The lesser-known varietals balance the dark notes of Zinfandel and collectively offer an intensity of aromatics. Instead of crushing the grapes, the winemaker relies on 100% carbonic maceration, meaning the grapes ferment under their own weight from the inside out, and low-sulfite winemaking.
