Why You’ll Love Organic Simply Stock - Vegetable Unsalted (2-pack)

Eating all your servings of vegetables every day is not always the easiest task to accomplish. If you give up finding a way to get carrots in at breakfast and just can’t risk cutting up an onion in front of coworkers at lunch, there’s an easier way to multiply your efforts: Make a hearty soup with vegetable stock.

There’s already a whole heap of carrots, onions, celery, leeks, and mushrooms working behind the scenes in Pacific Foods Unsalted Organic Vegetable Stock. After simmering in a pot of water for several hours, the natural flavors of each come to the surface, providing a great base for a number of veggie-inspired soups. This 2-pack of stock is also versatile enough to dial up the flavor of cooked rice and noodles and add a little something to sauces and dips.

Benefits of using vegetable stock

Because Pacific Foods Unsalted Vegetable Stock is 100 percent organic and free of salt, trans fats, and sugars, it’s a great way to enhance a healthy and/or animal-free diet.

It’s low-calorie and has zero fat. Vegetable stocks are generally low in calories (each single cup serving of Pacific Foods stock only has 15 calories) and have zero fat since no animal products are involved. So, it’s an easy way to add flavor to a number of dishes without detracting from your health goals, and also a much better option to use for delicious soups rather than a heavy cream base.

It’s good for when you are sick or dehydrated. There’s a reason mom always used to make soup when you were sick as a child. The warm broth can help comfort sore throats and the very few added ingredients in products like Pacific Foods Unsalted Vegetable Stock ensures that it won’t upset stomachs even more. With a heavy water base and some trace amounts of sodium, this stock is also a great way to become hydrated again while fighting an illness.

It provides an option for vegetarians and vegans. Many soups and stews are made from beef or chicken stock (even if they don’t actually have chunks of meat in the mix). This makes it difficult for vegetarians and vegans to enjoy a warm bowl, especially in restaurants where it’s not always certain what kind of stock was used. However, Pacific Foods Unsalted Vegetable Stock is a safe bet to use for homemade options, since it’s only made from the garden.

Advantages of going organic

Organic produce provides a variety of health benefits, including keeping harmful pesticides out of the food you eat. In general, when a food is certified organic, it provides reassurance that it has followed USDA regulations and doesn't contain risky material like preservatives, growth hormones, and GMOs. Because the food is kept in its natural state, this also means it’s richer in nutritional value.

As well, there is an environmental component to consuming organic foods. Organically farmed foods mean fewer chemicals not only for humans but also for the earth. Soil won’t be disrupted and harmful materials won’t be spread by various bugs and insects, which provides a more sustainable operation.

Cooking with vegetable stock

Of course, soup is a go-to use of vegetable stock, but there are also ways it can be used creatively in other dishes.

Tomato Chickpea Soup

Creamy tomato soup makes a wonderful meal, but it’s most often made with heavy cream or milk, which is a turn-off for non-dairy eaters and those watching caloric and fat intake. There is an alternative, though: chickpeas! Yes, believe it or not, pureed chickpeas can provide a consistency similar to dairy and are also mild enough to take on the spices in the dish. To make a pot of this soup, you’ll also need vegetable stock, finely diced organic tomatoes, onion, garlic, rosemary, olive oil, salt and pepper, and some raw honey for a slightly sweet note. Eat on its own with crackers or pair with grilled cheese for a perfect combo.

Kabocha Squash Soup with Pancetta

Squash soups are a staple in the fall, but also can be enjoyed any time of the year, especially with a tasty recipe like this one. It mixes the natural sweetness of the gourd with the saltiness of pancetta and some minced ginger and ground nutmeg for some extra spice. To make, you’ll also need vegetable stock, olive oil, shallots, and sage.

Braised Cabbage with Pears

Another option for vegetable stock is adding moisture and a punch of flavor to a number of other dishes, including braised red cabbage. The vegetable stock works with the added balsamic vinegar to break down the fibers and pickle the leaves for a delectable side dish. Adding cubed pears also adds a touch of sweetness that calms cabbage’s sour notes. Lastly, ginger and coriander add some additional depth of flavor and pine nuts on top gives the plate some crunch.

More about Pacific Foods

When Pacific Foods began in Oregon 28 years ago, they had a mission to “grow better, farm friendlier, and act kinder.” The idea was to make healthier and better tasting foods that always kept in mind the planet from which they are sourced and the people who would eventually be eating them.

Ever since, Pacific Foods has tracked all their ingredients, ensuring that all animals are treated kindly and that the footprint used to make them is as small as it can be, like using packaging that doesn’t require refrigeration. In 2010, the company received recognition as one of Portland’s best sustainable leaders by the Sustainability At Work program. Today, the Pacific Foods product line includes wholesome stocks and soups, purees, sauces, and meat and dairy alternatives that all aim to make a world of difference.

Reviews For Organic Simply Stock - Vegetable Unsalted (2-pack)

Based on 18 Reviews

very misleading size

I thought these were two of the larger stock cartons, I feel very duped. I've never even seen them in the stores in this individual milk-sized carton, I think it's very misleading and misrepresentative...very disappointing they don't carry the "normal" size broth.

- TJ

Great Gift

Ordered this for my brother who is recovering from throat cancer and currently has feed tube so wanted something with low sodium

- Diane Turner

I Didn't Realize How Small the Cartons were

I didn't realize how small the cartons were, but I do love the product itself! Tastes great. I just wish Thrive carried a larger size!

- Evie

Love this!

Agree with other reviews. This is the perfect size and sodium free. No more worrying about buying in the larger size and throwing out half of it. Quinoa tastes great cooked in this!

- Deb

Love this

I can't find sodium free in our area. Works great for my soups! Will be ordering more.

- Susan

These are the PERFECT size! No more worrying about waste like with the larger containers. Adds really great flavor when cooking Quinoa! I wish the price was more comparable per ounce to the 1 Quart product in supermarkets, but overall still relieved to have this smaller size when cooking for 1 or 2 people.

- Mama

I use vegetable broth for soups, marinating veggies for roasting/broiling, and by itself when I'm sick. My body doesn't tolerate much salt, so this was perfect. It tasted fresh, not bland or disgusting like other unsalted veggie broths from the supermarket, and I love that it is available in 8oz... I only cook for one, and the larger containers always end up in the fridge going bad long after I first open them!

- Sharron

Great to cook with

We used this to cook a rice, quinoa mix and it gave great flavor with very little effort!

Great for travel or if you don't like having leftover stock in the fridge.

- Lavonne

For sauteeing - SUPER small container

I think these are great - but this size is really only useself if using broth for something other than soup. I didn't pay attention to size and got this to make a soup base - I would need 10 of these! But flavor is great and I recommend if you need it for smaller purposes!

- Shilpa

this is very good stuff

- diana daniel

Micro Size

I love this broth but the 8 oz. size is ridiculous. The extra packaging seems unnecessary. If Thrive offers this in a larger size, I will happily buy this product again!

- Shannon

Check the details

I bought this not realizing it is UNsalted. Low sodium is great, but no salt whatsoever makes for using a lot of salt at the dinner table. Not a hit. Next time I'll read the fine print.

- Stephanie

Best vegan stock!

If you are a vegan or vegetarian, or just trying to cut down on the amount of cholesterol and fat in some meals, this stock can be amazing.

It is unsalted so you do have to be mindful that you would have to season it to your preference, otherwise it is too bland.

Another plus, is that if you don't cook in large portions, the small containers help keep the contents fresher.

- S. Boyd

I Wish All Stock Came Like This!

I wish that a stock came in containers like this and tasted this great. I make a lot of soup during the winter months and use this as a base sometimes. I love that the containers are portioned out and resealable! They are Certified Organic and Gluten-Free which makes this product superior to most.

What i didn't like what that I had to buy a bunch. I wish they came in a 12 pack or 6 pack. That way its almost a grab-n-go. I love this product and would buy it again regardless just, maybe in bulk.

- Marcus Lawson

Everything about this stock is great. The only ingredients are carrots, celery, onion, leeks, mushrooms, and water. There are no unrecognizable ingredients I need to worry about plus it is organic, gluten free, and non GMO! On top of all the healthy goodness, it tastes delicious too! I definitely recommend.

- Wesley Lucas

I love these small containers! AND it's no salt added! As a 2 person household, these small containers are perfect! No leftovers to be wasted.

- Diana

I love these little cartons! I keep one opened in my frig to grab when sauteing veggies in broth instead of oil. I used to open a 32 oz veggie broth/stock, but with this, it stays fresher while opened in my frig. It gives a lovely flavor; not overpowering. I will always keep this in stock in my pantry. Thanks for making it affordable Thrive!
