This is one of the best cakes I have ever made! It tastes even better than a cake with gluten and is a great size. (13 x9). Many gf cakes are smaller. I have used this cake in a variety of recipes that call for a cake mix as a base (egg nog pound cake) and it worked great!

Good taste. I added almond extract. Dries out easily. Next time I will try with four eggs.

Adding a 4th egg makes this a delicious moist cake. One of the best GF cakes.

O.K. My changed prep may have made it a bit dry.

I changed how I prepared this. I omitted half the oil and substituted applesauce. I used the suggested almond extract. I also separated the eggs, beat the yolks well before adding the other liquids, and beat the whites separately. I folded the whites in last, although I didn't gain a lot of volume. the cake was a little chewy/ tough - I might have over beaten it. It was tasty and not overly sweet. I left it out and exposed for a couple of hours to cool, and it seemed to get a bit dry. I then cooked some fat-free evaporated milk, some sugar, and some sweetened walnut milk to make a thicker, "tres leches"-type, base. I stirred in some vanilla ice cream to cool the milk mixture ( I was in a hurry to frost it!), and then poured it over the layers, back in their pans . With a lightly sweetened whipped cream icing, this was great. My Mexican friend couldn't resist it. Less of a hit with the 7- year-old.

This cake mix makes the best gluten-free cake I've tried so far. I have used it to make cake and cupcakes for non-GFers and they all raved. The only con is how pricey it is.

Odd taste

This gluten free mix didn't make a great cake. I expected the cake to come out soft and moist, but it came out gummy with a really odd texture and a strange taste. I've tried it twice now, same results. I guess finding a good gluten free cake mix is a challenge, but this definitely isn't one that I would put high on the list of gluten free products that I could recommend.

If you're on a gluten free diet, you probably know that finding tasty products is hard. I missed baking when I had to go gluten free, but Pamela's Bakery has brought back my sweet tooth! This mix is gluten free, dairy free and makes a moist, flavorful cake that I can garnish with strawberries and other fruit. It's good enough that I served it to my friends who aren't on a GF diet, and they couldn't tell the difference.

Best Ever for GF Pound Cake

I made the most delicious GF pound cake with this mix. Nobody could tell it was gluten free, and talk about MOIST. No gritty-ness that you might be used to with other GF mixes, this stuff rocks. Pamela's Bakery, time and time again, produces a wonderful product.

Super Yummy!

I'm on a strict no gluten, no dairy and no white sugar diet cause of food allergies and love it but it was my birthday and wanted to splurge :) so I bought this and made cupcakes with it. Oh my! Super yummy couldn't even tell it was gluten & dairy free! It tasted just like regular cupcakes!
