Vegan Shamrock Shake Recipe

Celebrate St. Patrick’s Day (or any day, really) with a green shake that’s sure to make your day extra lucky. The verdant color is all thanks to creamy avocado and refreshing mint. Blend and enjoy as an afternoon snack, evening dessert, or boost it for breakfast by adding a scoop of protein powder.

Vegan Shamrock Shake

Yield: 1 serving
Active Time: 5 minutes

Ingredients

1 cup Thrive Market Organic Oat Beverage
½ avocado, pitted and frozen
4 sprigs mint, plus more for garnish
¼ teaspoon pure peppermint extract
1 to 2 tablespoons sweetener of choice, like Swerve or maple syrup
Ice
Coconut whipped cream, for serving

Instructions

Add all ingredients except coconut whipped cream to a blender and blend until smooth. Top with coconut whipped cream before serving.
