With a flavorful coating from garlic powder, onion powder, and paprika, plus a quick steam in the pressure cooker, these ribs cook up extra tender in about half the time you’re used to.
Instant Pot Keto Ribs
Yield: Serves 2 to 3 people

Whisk together all the spices, then rub the mixture on both sides of the ribs. Pour apple cider vinegar and water into the base of your pressure cooker. Insert trivet into the inner pot, then place the ribs on top of the trivet, standing on their side. If needed, curl them around the pot so the pieces aren’t touching.
Lock lid in place and seal the pressure valve; cook on high pressure for 30 minutes. Release steam naturally for 15 minutes, then manually release remaining steam. While the steam releases, preheat broiler and line a sheet tray with parchment paper. Remove the ribs from the pot and place them on the sheet tray. Broil for 2 to 3 minutes, until slightly crisp.
