Meet a Southern cocktail with a Japanese twist. Make the matcha honey simple syrup in advance, then mix up a cocktail whenever the mood strikes. It’s perfect for warm-weather entertaining (just double the recipe for a crowd!).

For the matcha simple syrup:
½ cup honey
½ cup water
1 teaspoon matcha powder
For the cocktail:
4 mint leaves
1 tablespoon matcha simple syrup
Crushed ice
2 ounces bourbon
2 ounces tonic water
2 sprigs of mint
Make the simple syrup:
Add honey and water to a small saucepan set over medium-high heat; whisk until honey dissolves. Add matcha and steep 10 minutes; cool completely.
Make the cocktail:
Add mint leaves to the bottom of a glass and muddle to release oils. Add 1 tablespoon matcha honey syrup, then top with crushed ice. Add bourbon and tonic water; gently stir. Garnish with more mint leaves.
