Preheat oven to 350 degrees F. Lightly grease a cast-iron skillet with 1 tablespoon oil and dust about 2 tablespoons of brownie mix over the top. Combine remaining 2 tablespoons oil, brownie mix, water, brewed coffee, and coffee grounds in a bowl, stirring briskly with a whisk (approximately 20 stirs), until no lumps remain.
