This crave-worthy recipe starts with an amazing flour blend from Enjoy Life that’s gluten-free, dairy-free, and vegan, and then mixes in the rich flavor of coffee to enhance the chocolate notes. The test kitchen reports it’s pretty hard to eat just one bite, so don’t say we didn’t warn you.

3 tablespoons canola oil, divided
1 (14.5-ounce) box Enjoy Life Brownie Baking Mix
½ cup cold water
¼ cup brewed coffee
2 teaspoons ground coffee
½ cup Enjoy Life Dark Chocolate Morsels
Powdered sugar, for dusting (optional)
Preheat oven to 350 degrees F. Lightly grease a cast-iron skillet with 1 tablespoon oil and dust about 2 tablespoons of brownie mix over the top. Combine remaining 2 tablespoons oil, brownie mix, water, brewed coffee, and coffee grounds in a bowl, stirring briskly with a whisk (approximately 20 stirs), until no lumps remain. Stir in chocolate chips. Pour batter into skillet and spread evenly. Bake for approximately 20 to 25 minutes, or until a toothpick inserted comes out almost clean. Dust with powdered sugar (if using), before slicing and serving.
