Slightly sweet and extra tangy, red cabbage braised with pears, ginger, and balsamic vinegar is a warming and comforting dish. Serve it alongside any protein or add it to your Christmas table for some color.

2 heads red cabbage
4 to 5 ripe pears, cubed
2-inch knob ginger, peeled and minced
2 cups vegetable stock
4 tablespoons aged balsamic vinegar
1 teaspoon ground coriander
Pine nuts, to serve
Chopped fresh herbs, to serve
Halve cabbages and slice into 1-inch strips. Place in slow cooker along with pears, ginger, vegetable stock, vinegar, and coriander. Let stew and reduce for 2 hours.
To serve, top with pine nuts and chopped fresh herbs if desired.
