How good can a two-ingredient recipe be? Incredibly good—when that recipe is for homemade pistachio butter. The mild and sweet flavor of roasted pistachios transforms into a gluten-free, dairy-free, vegan, and creamy butter after only 10 minutes of blitzing in the food processor. Keep it simple with our basic recipe, or try an enhanced version with vanilla or cacao. Whichever approach you take, spread this butter on warm scones or biscuits, swirl it into your favorite vanilla ice cream base, add a dollop to crepes, or serve a small jar alongside a cheese and charcuterie platter.
Yield: 2 cups

2 cups roasted unsalted pistachios
½ teaspoon sea salt
Place pistachios and salt in a food processor and blend on high for 5 to 7 minutes, scraping down the sides every minute or so. You’ll see the butter go from looking like chopped nuts, to becoming sticky, to forming a ball, and finally, becoming a smooth, spreadable butter.
