In the prepared foods section of grocery stores everywhere, one of the most ubiquitous finds is the trusty chicken salad sandwich. Even though it almost always looks less-than-appetizing, plenty of people reach for it in a pinch.
Chicken salad doesn’t have to be sad—no way, not on Mark Sisson’s watch! His flavorful curry chicken salad will change your sandwich game for good. The secret ingredient: His own Primal Kitchen avocado oil mayo, which is made of just five ingredients.

1 teaspoon curry powder
Pinch sea salt
Pinch black pepper
3 to 4 tablespoons Primal Kitchen mayo
1 pound grilled chicken breast, cubed
3 to 4 stalks celery, chopped
1 cup apple, chopped
½ cup walnuts, chopped
Mix spices into mayo. In a separate bowl, toss chicken, celery, apple, and walnuts together. Add mayo to chicken mix and stir.
Before you break out the bread, consider enjoying it the Paleo way. Take a page from Sisson’s book and wrap it in a large fresh lettuce leaf instead—so fresh, so crunchy, so crazy-good.
