Making meals for little ones isn’t always easy. Discerning tastes and hungry tummies don’t always allow for experimentation in the kitchen.
Luckily, Sara Snow is a real pro at this. Here she shares three super simple and kid-approved recipes for lunch or dinner using one ingredient they’ll love: Safe Catch Wild Albacore Tuna. With this family favorite, Snow’s versatile meal ideas are easy (thank goodness) to whip up in no time flat (hallelujah!). The little ones can even help!

Deconstructed Pasta Tuna Salad
Cook pasta per instructions on package, drain, and toss with salt and EVOO. Put one portion into a portable snack cup. Open tuna and give it a stir to redistribute the natural oils back into the fish, then place into a separate snack cup. Fill additional snack cups with other veggies your kids loved; Snow used Greek olives, cucumber, and cherry tomatoes.
Stack the snack cups and pop into a lunch box with a cookie! Then the kids can eat them separately or assemble a pasta salad at lunch.
Classic Tuna Salad
2 6-oz. cans of Safe Catch Wild Albacore Tuna
½ cup mayonnaise
¼ cup celery, chopped
¼ cup onion, chopped
1 tablespoon parsley, chopped
1 tablespoon whole grain mustard
Juice of ¼ lemon
Sprinkle of paprika (optional)
Salt and pepper to taste
Mix all ingredients in a big bowl (the kids can help!) and serve on bread, crackers, or sliced endive leaves.
Mexican Spice Tuna
1 6-oz. can of Safe Catch Wild Albacore Tuna
2 tomatoes, chopped
¼ cup cilantro
Juice of one lime
⅓ cup red onion, diced
½ teaspoon salt
1 serrano or hot chili
Sandwich rolls or hamburger buns
Mix all ingredients in a big bowl and serve up on sandwich rolls or hamburger buns.
