Cinco de Mayo is heating up! This festive drink starts with fresh watermelon that’s blended with tequila and lime juice. Finish off this frothy sip with a coconut nectar simple syrup infused with jalapeños (it’ll kick your party up a notch). And here’s a tip: The watermelon cubes need to be frozen, so stick ‘em in the freezer the night before.

Watermelon and Lime Frozen Margarita

Ingredients

For the simple syrup:
1 ½ cups Thrive Market Organic Coconut Nectar
1 cup water
2 jalapeños, coarsely chopped

For the margaritas:
1 to 2 pounds watermelon
2 cups Blanco tequila
2 cups lime juice

For the garnishes:
Jalapeño slices
Lime wedges

Instructions


Make the simple syrup:
Add coconut nectar, jalapeños, and water to a small saucepan. Bring to a boil, stirring until nectar has dissolved. Let cool completely.

Make the margaritas:
Cut watermelon into 1-inch cubes and place on a sheet tray in a single layer; freeze. Add frozen watermelon to a blender, reserving 10 to 15 cubes. Pour in tequila, lime juice, and simple syrup; blend until smooth. Pour into salted rim glasses and top with reserved watermelon cubes. Garnish with jalapeño slices and lime wedges.
