Black Bean Brownie Bites Recipe

Here's an easy way to satisfy chocolate cravings without wrecking your clean-eating plans: brownie bite truffles made with black beans, cacao powder, and almond butter. They're perfectly creamy, a little decadent, and give you some protein, too—ideal for dessert or an afternoon snack.

Black Bean Brownie Bites

Yield: 10 truffles

1 (14-ounce) can black beans, rinsed and dried
1 ½ tablespoons coconut oil
1 tablespoon almond butter
3 tablespoons maple syrup
5 tablespoons cacao powder
1 teaspoon vanilla extract
1 teaspoon large-flake sea salt
Chia seeds, for coating


Place black beans, coconut oil, and almond butter in the bowl of a food processor fitted with the blade attachment. Process until smooth and creamy. Scrape down mixture and process again. Add maple syrup, cacao, vanilla, and salt; process until well incorporated. Place in fridge to chill 1 hour, or until firm.

Pour chia seeds into a shallow dish. Form cacao mixture into tablespoon-sized balls and roll them each in the chia seeds, coating all sides. Chill in fridge, covered, until ready to eat.
