Hemp Macadamia Raw Bars

Yield: 10 (4-inch) bars
Active Time: 10 minutes
Total Time: 2 hours and 10 minutes

For the bars
1 cup dried apricots
1 cup water
½ cup honey
2 cups raw macadamia nuts, coarsely chopped
2 cups unsweetened shredded coconut
2 tablespoons Manitoba Harvest Hemp Hearts

For the topping
¼ cup Manitoba Harvest Hemp Hearts
2 tablespoons bee pollen

Line an 8- by 8-inch dish with parchment paper, allowing a 2-inch overhang. Add apricots and water to a small bowl and soak for 10 minutes. Pour into food processor (water and all), then add honey and pulse until a thick paste forms. Add nuts, coconut, hemp hearts, and purée until blended. Scrape into dish and press down to flatten.
