What’s chewy, nutty, filling, and portable? DIY raw bars! These perfectly packable snacks are loaded with wholesome pantry ingredients like dried apricots, shredded coconut, and macadamia nuts. Honey adds sweetness, and hemp hearts deliver 20 amino acids, protein, and magnesium so you can feel good on the go. Plus, you can mix everything up in the food processor so they’re super easy to pull together.
Yield: 10 (4-inch) bars

For the bars
1 cup dried apricots
1 cup water
½ cup honey
2 cups raw macadamia nuts, coarsely chopped
2 cups unsweetened shredded coconut
2 tablespoons Manitoba Harvest Hemp Hearts
For the topping
¼ cup Manitoba Harvest Hemp Hearts
2 tablespoons bee pollen
Line an 8- by 8-inch dish with parchment paper, allowing a 2-inch overhang. Add apricots and water to a small bowl and soak for 10 minutes. Pour into food processor (water and all), then add honey and pulse until a thick paste forms. Add nuts, coconut, hemp hearts, and purée until blended. Scrape into dish and press down to flatten. Sprinkle with more hemp hearts and bee pollen. Refrigerate until firm, about 2 hours. Slice and enjoy!
