Sugar and spice and everything nice—that’s the secret to our take on sweet potato fries. Cumin and cayenne add just enough heat to bring out the natural sweetness of the potatoes—a little coconut sugar sprinkled on top adds even more complexity. Dunk them in zesty Primal Kitchen Chipotle-Lime Mayonnaise for even more zing.
Yield: 2 to 3 servings
Active Time: 15 minutes
Total Time: 45 minutes
3 large sweet potatoes, peeled
1 teaspoon ground cumin
1 teaspoon chili powder
1/4 to 1/2 teaspoon cayenne pepper
Large pinch sea salt
3 tablespoons coconut oil
1 tablespoon brown sugar or coconut sugar (optional)
Chipotle mayonnaise, for serving
Preheat oven to 425 degrees.
Cut sweet potatoes into evenly sized sticks and place in a large bowl. Toss with cumin, chili powder, cayenne pepper, salt, coconut oil, and sugar, if using.
Arrange in a single layer on two baking sheets. Bake 25 minutes, flipping the fries once after 12 minutes. Serve with chipotle mayonnaise on the side.
