Acai Bowl with Fresh Fruit and Coconut Chips

Looking for a great and healthy breakfast to start the day off right and fill you up with plenty of energy?

Want to make something to share with your friends and family, and maybe impress them just a little bit? This acai bowl will fulfill all of those wishes! Not only is acai powder incredibly good for you, but it’s also super yummy, especially when topped with different kinds of granola and coconut chips.

The acai mixture itself comes together very quickly. If you don’t have any time to make the coconut chips, you can leave this step out (even though they’re made super quickly as well).

Acai Bowl with Fresh Fruit and Coconut Chips

Serves 2

For the coconut chips:

6 tablespoons large coconut flakes (unsweetened)
2 teaspoons natural honey
3 tablespoons amaranth
1 teaspoon vanilla extract

Instructions:

Add all the ingredients into a medium sized saucepan and stir on medium heat until golden brown and well combined.

Take off the heat and add onto a plate. Set aside and let cool completely to let it get crispy.

For the acai mixture:

3 to 4 bananas, frozen
1 large apple
3/4 cup almond milk
1 tablespoon natural honey or agave nectar
1 tablespoon stevia
2 tablespoons acai powder

Instructions:

Take the bananas out of the freezer, peel the apple and add both into a blender.

Blend until super smooth with all the remaining ingredients. You might have to add another dash of milk to make it smoother.

You don’t necessarily have to use frozen bananas, but the taste is a lot better when you use frozen and ripe bananas. Don’t worry if you forget to put them in the freezer the night before — it still tastes great with unfrozen bananas.

Top the acai mixture with the coconut chips and your favorite fruits. Some of our favorites include sliced kiwi, banana, mango and of course, a handful of crunchy granola. Enjoy!
