Next time you fire up the grill, throw some halved peaches on it with the burgers or veggies. The heat caramelizes the fruit’s sugars, adding a slight smokiness, and leaving them as soft and warm as pie filling. In a small bowl, stir together yogurt and vanilla extract. Set aside.
Halve peaches, remove pits, and brush tops with coconut oil. Heat a grill pan or grill to medium heat. Place peaches cut side–down onto grill and cook about 4 to 6 minutes, until grill marks appear and peaches are tender.
Scoop a dollop of vanilla-yogurt mixture onto peaches, top with granola, and drizzle with honey to serve.
