One of the best things about making granola from scratch is that it’s easy and customizable. You can swap ingredients to suit your diet and taste preferences, or use whatever you have on hand. (Not a fan of walnuts? Try pecans or cashews. No flax seeds in the pantry? Leave ’em out, or toss in some sesame or chia seeds.) We made this healthy granola recipe paleo-friendly by skipping the oats and sweetening the mix with maple syrup.

1 cup sliced or slivered raw almonds
2 cups Thrive Market Organic Coconut Chips (unsweetened)
2 tablespoons Thrive Market Organic Whole Flaxseed
2 tablespoons hemp seed hearts
¼ cup Thrive Market Organic Pumpkin Seeds
¼ cup Thrive Market Organic Sunflower Seeds
1 cup Thrive Market Organic Dried Apple Rings, roughly chopped
Instructions
Preheat the oven to 325 degrees F. Line a rimmed baking sheet with a silicone baking mat or a sheet of ungreased parchment paper.
In a large mixing bowl, combine the olive oil, maple syrup, vanilla extract, salt, and apple pie spice. Whisk to combine.
Add the walnuts, almonds, coconut chips, and seeds to the bowl with the liquid mixture. Mix thoroughly until everything is well coated.
Spread the granola mixture in an even layer on the prepared baking sheet, pressing down with a spatula.
Bake for 20 to 30 minutes, stirring every 10 minutes, until lightly golden. Keep an eye on the granola as it bakes; the coconut, flax seeds, and hemp seeds are very sensitive to heat. If they start to look too dark or smell like they’re burning, take the pan out!
When granola is finished, remove the baking sheet from the oven. Sprinkle with dried apple. Allow to cool completely before breaking up and storing in an airtight container. Serve with your choice of non-dairy milk, yogurt, fruit, or simply enjoy by the handful.
