Lucuma Eggnog
Yield: 1 to 2 servings
Active Time: 5 minutes
Ingredients
½ cup lucuma powder
1 ½ cups almond milk
¾ teaspoon vanilla extract
2 tablespoons honey
¼ teaspoon ground nutmeg, plus more for garnish
1 teaspoon chia seeds
Pinch of Himalayan salt
Instructions
Place all ingredients in a high-speed blender and blend until smooth and thoroughly combined. Serve with a bit of nutmeg sprinkled on top. For a warm drink, pour blended drink into a small saucepan and gently warm over low heat on stovetop.
