Poaching Cod in Tomato Sauce Locks in a Flaky Texture and Rich Flavor

A bit wary of cooking seafood? There’s no need to be—especially with a recipe as foolproof as this one. Try this flaky poached cod with different flavors of tomato sauce—like marinara, spicy pepper, or tomato-basil—for endless variations.

Poached Cod

Ingredients

1 yellow onion, chopped
1 tablespoon olive oil
1 teaspoon balsamic vinegar
1 teaspoon honey
1 teaspoon soy sauce
1 (25-ounce) jar tomato sauce, of any flavor
Few sprigs thyme
4 (6-ounce) pieces Thrive Market Cod
1 small bunch chopped parsley, to garnish

Instructions

In a wide skillet or pot over medium heat, sauté chopped onion in olive oil until it turns golden brown in color and begins to caramelize, about 7 minutes. Stir in balsamic vinegar and let evaporate. Stir in honey and soy sauce. Let cook 1 minute.

Pour in tomato sauce and stir to combine. Add in a few sprigs of thyme and bring to a gentle boil. Slip cod into the sauce, reduce heat to medium-low, cover, and let cook about 7 minutes until cooked through yet tender and flaky.

Remove cod to serving platter and spoon sauce over. Top with chopped parsley.
