With poultry, seasoning under the skin is the key to developing incredible flavor. Here, butter mixed with sage, garlic, and chile spices up roasted drumsticks, while leaving the skin on keeps the meat tender and juicy. Serve with steamed veggies or a green salad for a fast yet tasty weeknight dinner.

3 tablespoons butter or ghee
3 teaspoons finely chopped sage
1 teaspoon red pepper flakes
2 cloves garlic, minced
Large pinch sea salt
Freshly ground pepper, to taste
2 whole chicken legs
Preheat oven to 425 degrees.
Mix butter, sage, chili, garlic, salt, and pepper in small bowl. Divide the butter mixture in two and stuff under the skin of each drumstick, taking care not to tear.
Place on a parchment-lined baking tray and roast in oven 25 minutes, or until golden and cooked through.
