3 tablespoons butter or ghee 3 teaspoons finely chopped sage 1 teaspoon chile flakes 2 cloves garlic, minced Large pinch sea salt Freshly ground pepper, to taste 2 whole chicken legs
Preheat oven to 425 degrees.
Mix butter, sage, chili, garlic, salt, and pepper in small bowl. Divide the butter mixture in two and stuff under the skin of each drumstick, taking care not to tear.
Place on a parchment-lined baking tray and roast in oven 25 minutes, or until golden and cooked through.
