If you’re looking for a healthy, delicious, yet filling meal for yourself or the whole family, this is exactly the recipe for you.
A marinated kale salad that is not only super easy to make, but also completely vegan and gluten-free.
All of the bright colors and different tastes will melt together in your mouth perfectly, and even brighten up your day! You’ll be making this salad again and again, and it’s a great excuse to bring the whole family to one table.
Serves 2
6 handfuls of fresh kale
1 tablespoon olive oil
1 tablespoon tahini
2 tablespoon lemon juice
1 tablespoon tamari
1 tablespoon natural honey or agave nectar
Salt and pepper to taste
Wash the kale and tear medium sized pieces off the stems. Place in a large bowl.
In another smaller bowl, start preparing the dressing by mixing together the olive oil, tahini, lemon juice, tamari and salt and pepper until well combined.
Drizzle the dressing over the kale salad and start massaging it into the leaves until they’re softened. This step will take about 2 minutes.
Put into the fridge and start preparing the toppings.
1 teaspoon coconut oil
1 large sweet potato
1 teaspoon curry powder
1teaspoon paprika
1/2 teaspoon onion powder
Salt and pepper to taste
Wash the sweet potato and cut into small cubes (with or without skin).
In a medium sized frying pan, heat up the coconut oil on medium-high heat. Add the sweet potato cubes, spices, stir well and fry for about 2 minutes.
Turn down the heat, fry for another few minutes and take off the heat. Don’t fry the potatoes too long, otherwise they will lose their crunchiness.
1 ripe avocado
1 to 2 tablespoons lemon juice
2 tablespoons dried cranberries
1 tablespoon roasted almonds
1 tablespoon dried coconut cubes
2 tablespoons pumpkin seeds
Cut the avocado into cubes and season with lemon juice and salt. Stir the sweet potato and toppings into the salad to mix all the flavors together, and enjoy this colorful and flavorful winter salad.
