Slathering a grapefruit in honey and ginger and broiling it for a few minutes creates a caramelized crust reminiscent of creme brulee. Enjoy it as a fancy breakfast or light dessert.
Yield: 4 servings
Active Time: 8 minutes
Total Time: 15 minutes
2 grapefruits
Scant 1/4 cup honey
1/4 cup candied ginger, chopped
1/3 cup pomegranate seeds
1/4 cup mint leaves, sliced in very thin strips
Preheat the oven’s broiler.
Slice the grapefruits in half and place on a parchment paper-lined baking sheet. Cut a small slice off the bottom of each half to help them stand upright.
Using a small pairing knife, loosen each section of grapefruit by making small cuts between the fruit, the peel, and the membrane on either side. In a small bowl, mix together honey and ginger. Drizzle mixture over each grapefruit half and place in the oven to broil for 5 minutes.
Garnish with pomegranate seeds and mint.
