Hosting a crowd? Don’t make the mistake of thinking you need to make everything from scratch. (That’s a guaranteed ticket to overwhelm.) Instead, we’re all about easy tricks like ready-for-you marinades that infuse big flavors—fast. This Whole30-approved and Paleo-friendly appetizer bakes chicken until crispy, then tosses every piece in a buffalo sauce made with olive oil, vinegar, and a generous dose of cayenne for extra heat.
Yield: 4 to 5 servings
Active Time: 15 minutes
Total Time: 1 hour
2 pounds chicken wings and drumettes
2 teaspoons baking powder
1 ½ teaspoons sea salt
1 ½ teaspoons ground pepper
1 cup The New Primal Mild Buffalo Sauce
2 green onions, thinly sliced
Arrange chicken pieces on a baking rack set over a sheet tray; refrigerate overnight to dry. (No time? Just dry the chicken thoroughly with paper towels before proceeding.)
Preheat oven to 425°F. Add chicken to a large bowl and sprinkle with baking powder, salt, and pepper; toss to coat. Place pieces back on the rack, about 1-inch apart. Bake for 20 minutes, then flip and cook until crispy, about 20 minutes more.
Add buffalo sauce to a large bowl. Using tongs, add chicken to bowl in batches, tossing with the sauce until fully coated. Repeat with remaining wings and sauce. Top with green onions.
