If desserts tend to sap your energy, here’s a new idea for satisfying your sweet tooth. We took the flavors of red velvet cake and turned them into snackable bites made of chocolate protein powder, sweet dates, and cashew butter. A dusting of beet powder is the finishing touch on these beautiful grab-and-go treats.

1 scoop Vega Protein, Chocolate
½ cup gluten-free rolled oats
½ cup pitted dates, coarsely chopped
7 tablespoons cashew butter
¼ cup raw cashews
3 tablespoons beet powder, plus more for dusting
2 tablespoons maple syrup
Coconut oil, as needed
Add all ingredients except coconut oil to a food processor and process until smooth, about 1 minute. If dough seems dry, add 1 tablespoon coconut oil at a time, until dough holds together when pressed between two fingers. Turn out into a bowl and squeeze dough together into a smooth mass. Form bite-sized balls by rolling dough between your palms, and arrange bites on a sheet tray. Dust with 2 tablespoons beet powder. Refrigerate for up to 5 days in an airtight container.
