Heard of overnight oats? This sweet, fruity take on tabouli puts them to shame. Here, honey lends a subtle sweetness to fresh fruit and bulgur wheat for a hearty breakfast.

3/4 cup honey, plus more to garnish
2 2/3 cups bulgur wheat
3/4 cup orange juice
1 cup dates, pitted and chopped
2 apples, unpeeled and chopped
2 pears, peeled and chopped
1 cup dried apricots, halved
1 pinch cinnamon
1 handful mint
Juice of 2 or 3 lemons
Bring honey to a boil with 2 cups water in a medium-sized saucepan, stirring constantly. Set aside and let cool slightly.
Put bulgur in a bowl with orange juice and honey syrup and leave to stand 2 hours until all moisture has absorbed and bulgur has softened.
Mix in dates, apples, peans, and apricots, along with cinnamon and mint. Mix well and add lemon juice and additional honey to taste.
