When it's summertime, the livin' should be easy. Instead of heating up the oven to make dinner, prepare this cool and refreshing salad made with fresh, raw zucchini, zesty lime, and bright herbs. It's great for all those barbecue invites, too.
Zucchini and Mozzarella Salad Recipe
Yield: 4 servings
Active Time: 5 minutes
3 medium zucchini Juice and zest of 1 lime 2 tablespoons olive oil Pinch of sea salt Pinch of freshly ground pepper 6 ounces small fresh mozzarella balls (ie. bocconcini) 1 bunch basil leaves, torn 1 bunch mint leaves, torn
Grate zucchini and place in a large bowl. Season with lime juice and zest, olive oil, sea salt, and pepper. Toss with mozzarella, basil, and mint. Serve immediately, or cover and let marinate in the fridge for 30 minutes.
