Old-fashioned rolled oats are one of the most versatile pantry staples. You can eat it as oatmeal in the morning, grind it up to make oat flour, and even add it to smoothies. But our new favorite way to eat rolled oats? These granola jam bars. This recipe uses pantry staples that you likely already have—such as flour, rolled oats, spices, and jam. It’s perfect for any morning and can be made in under 30 minutes.

1 ¾ cups Thrive Market All-Purpose Flour
1 ¾ cups Thrive Market Rolled Oats
1 cup Thrive Market Walnuts, coarsely chopped
1 cup Thrive Market Coconut Sugar
1 teaspoon Thrive Market Baking Soda
1/2 teaspoon Thrive Market Ground Nutmeg
1/2 teaspoon Thrive Market Kosher Sea Salt
¾ cup melted Thrive Market Coconut Oil
1 ¼ cups jam or preserves, apricot, strawberry or jam of choice
Preheat the oven to 350 degrees F. Spray a 9 by 13 baking dish with cooking spray. Line the bottom with parchment paper. Spray the parchment paper with cooking spray and set aside.
Whisk flour, oats, walnuts, sugar, nutmeg, salt and soda in a large bowl. Pour in the oil and stir until mixture is coated with all the oil. Press ¾ cup oat mixture onto the bottom of the pan. Spread the jam evenly over the crust. Sprinkle the remaining crust on top.
Bake for 25 to 30 minutes, until the crust is golden brown. Let cool completely before cutting. Store in an airtight container in the refrigerator for up to 2 weeks.
