At home, here are two ways to flavor your crepes—one savory and one sweet—without setting off the fire alarms! Skip the batter and use Paleo coconut wraps made with organic ingredients like coconut meat, coconut water, and extra-virgin coconut oil. For a savory dinner, roll up coconut turmeric wraps with flavorfully seasoned mushrooms and stick with the original version for a sweet dessert flavored with zesty orange and honey.

Turmeric Mushroom Crepes

2 teaspoons Thrive Market Organic Virgin Coconut Oil, divided
8 ounces shiitake mushrooms, sliced
1 medium shallot, chopped
2 garlic cloves, minced
1 (13.5-ounce) can Thrive Market Organic Coconut Milk
1 sprig fresh rosemary
1 teaspoon sea salt
½ teaspoon Thrive Market Organic Ground Black Pepper
½ teaspoon Thrive Market Organic Ground Nutmeg
¼ cup nutritional yeast
Zest of 1 lemon
4 Thrive Market Organic Turmeric Coconut Wraps
¼ cup chopped parsley
2 tablespoons chopped chives

Warm 1 teaspoon coconut oil in a large skillet over medium heat. Add shiitake mushrooms and sauté until tender and beginning to brown; about 7 to 9 minutes. Transfer to a towel-lined plate.

Add remaining 1 teaspoon coconut oil to the same pan; sauté shallots for 1 to 2 minutes. Add garlic, and cook for an additional 30 seconds, until fragrant. Add coconut milk, rosemary, salt, pepper, and nutmeg; stir. Bring to a boil, then reduce heat and simmer 30 minutes. Discard the rosemary sprig, then add nutritional yeast, lemon zest, and taste for seasonings.

On a cutting board, fold each coconut wrap in half, then in half again. Place crepes into skillet and let simmer 1 minute, then flip to coat the other side with sauce. Remove crepes with a slotted spoon and add reserved mushrooms to the pan; heat for 1 to 2 minutes. To serve, pour mushroom sauce over warmed crepes and sprinkle with parsley and chives.

Orange Coconut Crepes

Yield: 2 servings

Total Time: 20 minutes

¼ cup Thrive Market Organic, Raw, Unstrained Honey
2 tablespoons Thrive Market Ghee
1 cup freshly squeezed orange juice
Zest of 1 orange
¼ tsp sea salt
4 Thrive Market Organic Original Coconut Wraps
1 orange, peeled and sectioned
Basil, chopped
Thrive Market Organic Coconut Cream, for serving (optional)

Add honey and ghee to a large skillet; whisk over medium heat until ghee melts. Add the orange juice, zest, and salt; whisk until combined.

On a cutting board, fold each coconut wrap in half, then in half again. Place each triangle into skillet, then add orange segments and basil and simmer 3 minutes. To serve, transfer crepes to plates and top with orange segments and some of the cooking liquid. Add a dollop of coconut cream, if desired.
