Ingredients
2 medium zucchini, thinly sliced
¼ cup olive oil, divided
1 teaspoon Single Origin by Simply Organic® Californian Garlic
1 teaspoon Single Origin by Simply Organic® Californian Onion
1 cup raw almonds, chopped (or nut of choice)
1 pound pasta of choice
1 cup grated Parmesan cheese
¼ cup pickled cherry peppers, chopped
1 lemon, juice and zest
8 ounces burrata cheese, for serving, optional
Sea salt, to taste
Freshly ground black peppercorns, to taste
Instructions
Preheat oven to 450° F. Place zucchini on a rimmed sheet pan and drizzle with olive oil. Add garlic and onion powders plus salt and pepper, then toss to coat evenly.
Roast for 15 minutes, stirring halfway through. Remove from oven and add nuts, tossing to coat, then roast for an additional 10 minutes.
Meanwhile, bring a large pot of salted water to a boil. Add pasta and cook to al dente, saving 1 cup of pasta water, then drain pasta and return to pot.
Add roasted zucchini, nuts, and remaining olive oil. Stir to combine, then add cheese, about ½ cup reserved pasta water, cherry peppers, lemon juice, and zest. Mix well, adding additional pasta water if needed to coat pasta.
Serve in bowls and top with burrata, if using. Season with additional salt and pepper to taste.

Ingredients
1 packet Simply Organic® Brown Gravy Mix
1 cup water
1 tablespoon sesame oil
1 pound flank steak, thinly sliced
3 cups broccoli florets
1 tablespoon minced garlic
2 teaspoons minced fresh ginger (or ⅛ to ¼ teaspoon Simply Organic® Ground Ginger)
1 tablespoon soy sauce, optional (or use soy or coconut aminos)
Cooked rice, optional
Instructions
In a bowl, mix together gravy mix and water, and set aside.
In a large skillet over medium-high heat, add sesame oil. Once heated, add flank steak and cook for about 6 to 8 minutes, until browned on all sides.
Add broccoli and cook, stirring and flipping, for 3 to 4 minutes. Add garlic and ginger, stir well, and cook for 1 minute.
Add gravy mixture and soy sauce, if using. Stir well, then reduce heat to low. Continue cooking for 3 to 4 minutes, until gravy thickens into a sauce to coat the beef and broccoli.
Serve hot with rice, if desired.

2 cups whole-grain pasta, cooked
Instructions
In a medium saucepan, sauté chicken in olive oil over medium heat.
Once chicken is browned, add frozen corn, milk, and Alfredo mix.
Bring to a boil, then add parsley plus salt and pepper to taste.
Toss with cooked pasta and serve.
