Cod is delicate white fish that’s mild enough in flavor for kid-friendly fish sticks. Here it gets baked in a crispy, salty, buttery crust made from two unexpected ingredients—potato chips and cornflakes!
Gluten-Free Fish Sticks
Yield: 4 to 6 servings

Total Time: 25 minutes
Ingredients
3 cups potato chips, crushed
2 cups gluten-free corn flakes, crushed
5 tablespoons ghee, melted
2 pounds skinless cod fillets, cut into 1-inch strips
Sea salt and pepper, to taste
Lemon slices and roughly chopped parsley, to garnish
Instructions
Preheat oven to 400 degrees and line a baking sheet with parchment paper.
In a large bowl, stir together crushed chips and cornflakes with melted ghee. Place cod strips about an inch apart on sheet. Season with salt and coat with corn flake mixture, pressing down to help the it adhere to the fish.
Bake 15 minutes until golden, flaky, and crisp. Sprinkle with parsley and serve with lemon slices.
