You know we can’t resist putting a more wholesome spin on classic desserts, which is why we came up with a recipe for chewy brownies that includes cocoa-flavored protein powder. Thanks to the added nutritional boost, you can feel even better about indulging in a decadent peanut butter and chocolate treat.
Yield: 12 brownies
Active Time: 15 minutes
Total Time: 1 hour
1 cup almond flour
¼ cup tapioca flour
â…“ cup cacao powder
2 scoops wellmade Organic Plant Protein, Chocolate
1 teaspoon baking powder
½ teaspoon salt
1 cup peanut butter
2 tablespoons maple syrup
2 tablespoons coconut oil, melted
½ cup almond milk
2 packages dark chocolate peanut butter cups
Preheat oven to 350°F and line an 8- x 8-inch baking dish with parchment overlapping on each side. Spray with cooking spray.
Whisk together almond flour and tapioca flours, cacao powder, protein powder, baking powder, and salt in a medium bowl. In a large bowl, whisk together peanut butter, maple syrup, and coconut oil. Whisk in almond milk. Add dry ingredients to the wet ingredients and stir until just incorporated, taking care not to overmix. Spoon batter into the baking dish and spread evenly with an icing spatula. Arrange peanut butter cups on top, slightly pushing them down until the sides are covered with batter. Bake for 20 to 25 minutes, or until the batter pushes back when touched. Let cool completely before removing from the baking dish and slicing. Store at room temperature in an airtight container for up to 5 days.
