Satisfy your sweet tooth with a batch of lightened up truffles. Raw cacao powder gives the candies a rich, dark chocolate flavor, while spicy candied ginger and zesty orange add some brightness. Pop one whenever you need a pick-me-up—and feel good about your choice, knowing they’re vegan and refined sugar–free.
Raw Chocolate-Ginger Truffles
Yield: 6 to 8 servings
Active Time: 10 minutes
Combine dates, ginger, 1/2 cup cacao powder, coconut, orange zest, salt, and maple syrup in bowl of food processor fitted with blade attachment and process until smooth.
Place remaining 1/2 cup cacao powder in a shallow bowl. Roll ginger-date mixture into 1-inch balls, then roll the truffles in cacao powder. Store, covered, in a cool dry place.
