About This Brand

Deliciously responsible cacao and coconut products. From all things raw, to working to build sustainable livelihoods for their farmer partners, to being good stewards of ecology, Big Tree Farms is a champion for a brighter future in food and it's an ethos that starts right at the top.Ben Ripple, one of the founders, had set a foundation of six long years in sustainable agriculture on his small Balinese farm but, in 2006 things quickly began to evolve towards the company as it is today, when Big Tree Farms started to work with a small group of cacao farmers on Western Bali. The goal was to create more transparent market access for these farmers, by helping add value to their cacao and selling to the global premium chocolate market. It was pure serendipity that Ben was introduced to Frederick Schilling, the founder of Dagoba, an innovator in gourmet and organic chocolate. With Frederick's expertise, and a lot of hard work, our cacao program flourished and became the global model for a...

Why You’ll Love Organic Coconut Palm Nectar, Blonde

Having a sweet tooth is no joke, often nagging at you until you give in to it. While we now know the hidden dangers of refined sugar, there are other options to fulfill the cravings while still staying healthy.

Big Tree Farms Blonde Organic Coconut Palm Nectar is an alternative liquid sweetener, like honey or agave, except that it’s made from the unrefined, nutrient-rich sap of the coconut tree. It can be used in many of the same ways as sugar—making desserts, adding extra flavor to smoothies, and finishing off a mug of coffee or tea.

The 11.5 oz. bottle is easy to pour and resealable for the utmost fresh quality every time you use it.

About raw coconut nectar

Coconut nectar is similar to maple syrup in its texture with a rich, dark flavor comparable to the mix of earthy and sweet undertones in molasses.

So, why opt for products like Big Tree Farms Blonde Organic Coconut Palm Nectar over traditional syrup or agave? Many people choose coconut nectar as a sweetener because it has less fructose (the natural sugar in fruit) and contains a good quantity of amino acids, which makes eating sweets that much sweeter.

Compared to other refined sugar and artificial concentrated sweeteners, Big Tree Farms Blonde Organic Coconut Palm Nectar is also a low glycemic sweetener. The Glycemic Index (or GI for short) is a standard measurement that ranks how quickly blood sugar levels will rise after a product is consumed. Sugars that get released into the bloodstream slowly have a low GI, and are better to consume because they won’t lead to further cravings or have the damaging long-term effects that could lead to conditions like diabetes.

Big Tree Farms Blonde Organic Coconut Palm Nectar also has concentrations of polysaccharide inulin—a fiber that aids in the digestion process.

More about amino acids

Amino acids are the building blocks of protein, which is vital to the human body in so many ways. Protein not only helps to transport and store nutrients, but it also makes up cells, tissues, and muscles, and is essential for muscle growth and tissue repair when an injury occurs.

Protein helps to fuel the body and provides a feeling of fullness, so when you enjoy a dessert made with coconut nectar you’ll feel satisfied afterwards—as opposed to eating a candy bar that simply leaves you feeling hungry an hour later. For this reason, consuming enough amino acids and protein is one of the keys to weight management.

There are 17 total amino acids: The body makes eight of them naturally, but the other nine must be obtained through the foods we eat. Coconut nectar actually contains all nine of these aminos.

Cooking with Big Tree Farms Blonde Organic Coconut Palm Nectar

Big Tree Farms Blonde Organic Coconut Palm Nectar can be used in nearly any application that you might consider honey, agave, maple syrup, or regular sugar. It’s a great addition to yogurt, pancakes, waffles, raw and vegan desserts, and even beverages. Here are a few of Thrive Market’s favorite ways to cook with coconut nectar.

“Skinny” Coconut Margarita

Margaritas sound refreshing and tasty at any party, but all of the added sugar is sure to give you a headache by the end of the night. Instead, try this alternative recipe that stirs up a new kind of cocktail by using coconut in four ways. Coconut water cuts the intense bite of the tequila, while a splash of coconut milk makes it velvety smooth. To sweeten things up, add in a dash of Big Tree Farms Blonde Organic Coconut Palm Nectar, and then finish the drink with a coconut-salted rim.

Coconut Flour Pancakes

Nothing beats a stack of warm, fluffy pancakes on weekend mornings. But if you’re trying to stay healthy, go for this Paleo-friendly version that uses coconut flour for the base and coconut oil for cooking plus vanilla extract and lemon and orange zest for energizing flavor. Top with a bit of Big Tree Farms Blonde Organic Coconut Palm Nectar instead of maple syrup—and even add some fresh strawberries, blueberries, or raspberries to make them extra fruity.

Grilled Peaches with Yogurt and Granola

After you’ve cooked burgers and vegetables, keep the grill fired up and throw on some halved peaches for dessert. The heat of the flame will caramelize the natural sugars in the fruit, adding some smokiness and leaving the meat soft and warm, just like the filling of a cobbler. Top with some creamy yogurt and crunchy granola bits, and a little drizzle of coconut nectar for an incredibly sweet treat.

Hidden Greens Blueberry Smoothie

Eating all your greens is not always the easiest thing to do (and it’s even harder to get kids to eat enough), but everyone can enjoy this smoothie, which packs in tons of “hidden” spinach. The leaves are nearly undetectable given the rich purple color of the blueberries and the added sweeteners including Medjool dates and a tablespoon of Big Tree Farms Blonde Organic Coconut Palm Nectar. Added chia seeds and hemp seeds provide extra protein for a good boost in the morning, too.

Vegan Oatmeal Raisin Cookies

Fill your cookie jar with these oatmeal raisin treats that are just the right amount of sweet but are also vegan and gluten-free so you can enjoy them without guilt. The dough is made with almond flour, gluten-free rolled oats, baking soda, sea salt, coconut oil, raisins, and spices. Substitute coconut nectar for maple syrup to really bring out the striking flavors of cinnamon and cardamom. As these cookies bake, the scent will fill your home and remind you of afternoons at grandma’s house.

Great!

I use this instead of maple syrup on pancakes, etc. Sometimes also use it in coffee and for baking. I like the flavor, though it did get some getting used to. My family hasn't gotten on board with it yet.

Organic Coconut Palm Nectar

Love this stuff. Consistency of a maple syrup except a different taste.

"Healthier" Margaritas...

I replaced Agave Nectar with this stuff... Pure deliciousness...

Disappointed

I use a number of different alternative sweeteners including Coconut sugar and Agave, but I have to say I just don't care for the taste of this Coconut nectar nor do my kids.

BIG TREE ORGANIC COCONUT NECTAR

Recently I've eliminated all refined sugar from my diet...so am happy to find this product. It's low glycemic (35gI) and can even be used safely by diabetics. After receiving it, I had to open the bottle for a quick taste...and am happy to report the flavor is delicious! Not as sweet as honey, but same consistency....I will be using this as a maple syrup, honey, agave replacement....The price is great too!

- Diane

Love this stuff!

I've not tried the other brands. I enjoy this so am sticking with it. I don't consume refined sugar so this is my go to. I've used it in baked goods and as the sweetener in my energy bites. My favorite is in my cold brew iced coffee. I use a little toffee stevia and this. It mixes easily and completely in cold drinks.
