Vital Wheat Gluten
Just tried this for the first time in my bread machine. Really does improve the texture of the bread. A nice bonus is that it can be used to make seitan! Will have to try that.
Makes a big difference
I had been wanting to make some rye bread, but had been unable to find any wheat gluten in the stores. So, I finally decided to look online and found this product at a great price. My first loaf of rye bread turned out great. The texture was perfect as was the taste.

Good helper for making bread.
After making bread for the first time and it sinking. I did some research and discovered that adding Vital Wheat and Gluten Flour would help the bread from sinking, so I decided to buy some, and I am glad I did. It not only keeps it from sinking it makes the bread light and airy. Less is more, I discovered that 1/4 tsp for 1 pound of bread works great. It does make a difference
