When the Brazi Bites founder moved to the U.S. from Brazil, she missed her family's pão de queijo, a bun-like cheese bread. Making her own using simple ingredients—like tapioca flour—ensures a gluten-free bite for all.

Pão de Queijo is a Brazilian cheese bread that every freezer in the country is stocked with for impromptu get-togethers. While the light and cheesy morsels are commonplace in Brazil, Brazi Bites founder Junea Rocha had a hard time finding them locally when she first moved to the United States. Rocha called her mother to ask for the family recipe and started experimenting with nostalgic recipes in her home kitchen in 2009.

The History of Brazi Bites

Pão de Queijo is traditionally made with “minas” cheese that’s only found in Brazil, so Junea and her husband, Cameron, tried dozens of new options until settling on the perfect combination. In an interview with Forbes, Rocha—who has a degree in civil engineering—explains that a “shift to business owner came after I realized I didn't see a future for myself in the construction industry. There was a gap in the market for a product I loved and grew up eating in Brazil.” Although she kept her construction job for a couple of years while the business was getting started, the couple pitched Brazi Bites on ABC’s popular show Shark Tank in 2015, and their fun-loving brand was soon available in freezer aisles nationwide.
