That was the beginning of Louisville Jerky Co, which started in Chase’s kitchen in 2012 and was inspired by the Cantonese-style barbeque he enjoyed growing up on Oahu. Chase tested the original recipe on patrons at a local bar, and knew he was onto something when everything he brought was devoured within minutes—all without them knowing the snack was 100% vegan.
