Inka Crops is known for bringing indigenous ingredients from Peru into your kitchens. Let’s start with plantains, which are often mistaken for bananas. Plantains are technically a fruit, but often treated as vegetables when cooked (they’re also larger and much harder to peel than regular bananas). Once you get past the peel, though, you’ll find a seriously starchy and slightly sweet flesh which—no big surprise—is the perfect texture for crunchy chips that can stand in for your favorite potato or tortilla chip variety. Next up: corn. Also known as choclo, this large-kernel variety grows in the Andes mountains. It doesn’t share many qualities with the corn you find in the supermarket, though. This vegetable is starchy and less sweet than U.S.-grown corn, with a similar flavor to hominy. Peruvian corn is typically white in color, and used as a base for many traditional dishes like arepas. But you don’t have to fly to Peru to enjoy these ingredients. Just head to Thrive Market to get shopping.
