Has a great, substantial texture unlike a lot of GF pastas. If you follow the directions as written it is texturally very similar to traditional pasta. The smell was odd at first (like chicken broth almost) but ignorable. The taste is distinctly cheesy, so you may not want to use all of the powder or add more butter/milk. Also note that the powder is not vegan
