In 2003, Kurt Beecher Dammeier opened the first Beecher’s Handmade Cheese in Seattle’s historic Pike Place Market. Dammeier was passionate about eating food free from additives and preservatives, so they handcrafted every batch of cheese with ingredients like milk sourced from local farms, and used traditional cheesemaking methods that continue today. In 2007, Beecher’s clothbound and open-air aged cheese, Flagship Reserve, was awarded 2nd place Best of Show at the 24th Annual American Cheese Society competition, making it the highest rated cheddar-style cheese in the country. When they opened an operation in New York City’s Flatiron district in 2011, they stuck to their values of sourcing local milk, working with a dairy in Albany to create East Coast cheese with the same quality as their West Coast options.
