I am following Dr. Steven Gundry's Plant Paradox eating plan which revolves around eating lectin-free or low lectin containing foods. I love that Eden's soaks and pressure cooks their beans prior to packaging to kill the lectins making them safe to eat and Plant Paradox approved! This saves so much time, to be able to buy them already prepared in this way!
